Notes Software

mac note-taking software in which you write notes in one long document and can search and organize by time?

I've downloaded trials of several programs for notetaking, but I don't like any of them. I just want to be able to hit one keyboard shortcut to start writing and one to save and add a time and date to the end of a thought. Then be able to search and have the program organize the notes by time and date or by keywords.
