What is the best software for notes taking for MacOSX?

I'd like to take notes with my MacBook in class during lectures in College/University. What is the best software to use in order to take notes? The software should be easy and fast to use and should provide nice support like inserting figures, creating graphs, tables, drawing schemes and so on.
